I thought I would start off the new blog with one of my favorite healthy/low point desserts...pumpkin muffins that are 2pts each. If you love pumpkin pie...you'll love this easy recipe! Enjoy!
1 - 15 oz can of pumpkin
1 - 18.25 oz spice cake mix
Stir things up till well blended and put in 18 muffin cups. Bake at 350 degrees F for 18 minutes.
Great with Fat Free (or Sugar Free) cool whip but remember to add additional point(s).

There has been a question on which "can of pumpkin" I use - it's Libby's 100% Pure Pumpkin: http://www.verybestbaking.com/products/libbys/pumpkin.aspx. I hear right now there is a shortage, but hopefully it'll be back in stores soon.
