The tomatoes are coming..

I'm finally getting some wonderful sweet tomatoes from my CSA farm, so now is the time to post a recipe that needs good fresh tomatoes.

Amount Measure Ingredient -- Preparation Method

1/2 cup bulgur -- soaked
1/4 cup fresh parsley -- chopped
3 green onion -- chopped
2 tablespoons fresh mint -- chopped
1 1/2 large tomatoes -- chopped
1/2 large cucumber -- quartered and sliced
1 1/2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
3/8 teaspoon salt
1 1/2 dashes black pepper

Soak bulgur in boiling water for about 1/2 hour, drain.

Mix olive oil, lemon juice, salt,pepper, parsley and mint in the bottom of a bowl. Add bulgur and chopped vegetables, toss. Chill several hours or overnight.

Serving Ideas : add crumbled feta cheeese

NOTES : Add chick peas for a main dish salad-1 can to 4 serv

Another good idea is to make salsa. Here is a recipe on my recipes to-try list:

Spicy Salsa

Ingredients
16 oz. Can Whole Tomatoes

1 sm. Green Pepper, chopped

1/3 c. Mild Onion, chopped

3 Tbs. Green Onion, chopped

4 oz. Can Green Chilies, diced, -rinsed and drained

3 Tbs. Cilantro, freshly chopped

1/2 Garlic Clove, minced


Directions
Puree tomatoes with their juice in a blender or food processor. Combine other ingredients and stir into tomatoes. (Chill in refrigerator up to 5 days.) Yield: 7 servings, 2-1/3 cups

Adding comments that boost the conversation and that usually do not repeat what has already been said is very critical. At the same point in time, having a newer blog accompanied by a smaller community, I still always appreciate even one of the most simple comments including "I really enjoyed this approach post", "thanks for writing about this topic" etc...it really is nice to be reassured that men and women appreciate what you're writing. This may be less acceptable essential for bigger, more popular personal blogs.
