Fostering Local Food Procurement & Promoting Sustainable Practices

Purpose

To foster local food procurement with the University of Minnesota, Crookston (UMC) dining services while promoting sustainable practices on campus and the Crookston community.

Activities

  • UMC students participate in SELFsustain event at Morris in October 2011
  • Host Environmental Policy Clinic student project by Susan Hallquist
  • Establish a Food Advisory Board (2012) at UM Crookston campus
  • Abbey Wemimo creates quantitative Research Study “The Importance of Sustainability to the University of Minnesota, Crookston Student” (2012/2013)
  • Student interns visit the Cornercopia farm at the University of Minnesota St. Paul (June, 2012)
  • Invite the Real Food Challenge to help establish a quantitative rubric for UMC dining services (April, 2013)

Outcomes

Anticipated outcomes: 
    • Production of local foods at the UMC Green House 
    • One acre campus garden or farmland  
    • Crookston Student Association establishing a food committee 
    • Quantitative rubric for UMC dining services facilitated by the Real Food Challenge
