Today is the inauguration of the fourth chancellor of the University of Minnesota, Crookston, Dr. Charles Casey. And local foods have taken center stage as a key part of the celebration. Why local foods? Dr. Casey and his wife, Barbara Muesing, have roots in rural Minnesota.
